Welfare and meat quality of lambs

Recently, in many parts of the world, greater importance has been given to lamb meat as well intensive production and sheep, due demand for this type at affordable prices. In Serbia, similar most European countries, structure total sheep comprises about 70% 30% meat. This study assessed resource-based measures on 11 dairy farms investigated, a 30 lambs, effects sex, presence bruises pneumonia carcasses, carcass quality. Carcass (carcass length, thigh croup width, subcutaneous fat thickness, bruises) quality (pH, temperature, drip, thawing cooking losses, color, classes) traits were measured post mortem. The common deficiencies high stocking density, poor hygienic conditions, dirty drinkers, lack outdoor access. Regarding sex differences, higher prevalences severe recorded male lambs.
